Jérôme Saurigny studied oenology in Bordeaux, then worked as a cellar master in the Pomerol region, where he collaborated, among others, with a team from Château Cheval Blanc. It was during this time that he met Patrick Desplats and Sébastien Dervieux («Babass»), founders of Domaine des Griottes and pioneers of natural wine in Anjou. He worked alongside them for several years before striking out on his own.
In the mid-2000s, he took over a dozen hectares of vineyards and a winery on the slopes of the Layon, a small river that flows into the Loire near Angers. Starting with his first vintage, in 2007, he has been making wine without added sulfites or other additives, relying on native yeasts. He subsequently reduced the estate’s size to about 6.5 hectares, which are worked by horse, with little or no treatment.
