It's on the hills of Faugères (Hérault) that Chloé and Frédéric have perched Domaine Les Serrals. This schist soil is home to their plots of young, "dynamic" Grenache, "disciplined" and "rebellious" Mourvèdre and Syrah, and offers the ancestral Carignan and Cinsault an old age with a view of the Mediterranean. Here, the landscape seems to freeze its slow ebb and flow into earthy undulations.
Chloé and Frédéric cultivate five hectares spread over sunny hillsides, embracing two valleys with cooler climates. Driven by a poetic conviction, they work by hand whenever possible. "Balance" is their watchword. At Les Serrals, the expression of terroir guides the production process.
