Vinification : Maceration in thermo-regulated stainless steel tanks, then aging in French oak barrels, all without added sulfites. Enzyme-free, tannin-free cold pre-fermentation maceration, no chaptalization, alcoholic fermentation at 17°C with indigenous yeasts, malolactic fermentation at 20°C with indigenous bacteria, finished wines are not fined before bottling, no acidification or deacidification.
