Imagine yourself walking through the charming Champagne region. On your left, the church of Saint-Martin overlooks the small village of Chavot-Courcourt, formerly Chavost. Vines and fields cover the horizon with the last greens of the season. The vines are empty, their hibernation barely begun. This mist-covered landscape, pierced in places by orange rays, inspires a paradoxically calm excitement. You take a deep breath, the air smells earthy and the cold grips your nostrils. With a smile on your lips, you decide to continue: deep down, you know that a discovery awaits you in the village. After a few meters on Rue de l'Église, a crossroads appeals to your intuition. Turn left. It's on the left that the bubbles sparkle like an echo to the lights in your delighted eyes. Further along rue d'Ilbensheim, just after another left turn, the large hangar with its turquoise-green roof stands before you. Fabian is there to welcome you too. A new adventure begins, full of bubbles, sparkles and flavors as luxurious as they are pure, as simple as they are complex.
Fabian is the winemaker at the Champagne-Chavost estate. "After 10 years of winemaking in the 4 corners of the globe, he returned to the House with new projects to vinify differently, to make atypical Champagnes, with as few inputs as possible, sometimes none at all..."
