Volnay

This beautiful and rare Volnay comes from pinot noir grapes resting on clay-limestone soils with deep Batonian soils. The 2017 vintage is considered by the producer to be rich, fruity, with a gourmand and enveloping palate. In the vineyard, herbicides and chemicals are banned, and "natural" viticulture is practiced. Harvesting is manual, with selection of the best grapes; vinification is traditional, using indigenous yeasts and stainless steel fermentation in open tanks at controlled temperature (32°C). The wine is aged in new barrels for 25% of the mass, in used barrels for the remaining 75% for a total duration of 18 months.
