"Le Fab" is a specialist in microcuvéesand not only. Arriving in Neuchâtel from France in 2014 as a sommelier, he met Jean-Daniel Giauque, an engaging winemaker from La Neuveville. A decisive turning point that he seems to have called upon all his life.
"The intense, disconnected pace of the restaurant business didn't suit me, but this period taught me an enormous amount. And then there's the wonderful pleasure of discovering and sharing good wines! I trained in viticulture and oenology during these years, wanting to make wine with all my heart. Meeting Jean-Daniel gave me the opportunity to make this dream a reality.
So it's under the aegis of the Neuvevillois winegrower that he cultivates the grape, that "magnificent, complex-shaped fruit", before undertaking his own vinifications with grape varieties from the same estate. From Alsatian varieties such as Gewürztraminer to Pinot blanc or Chasselas rose, from the usual Syrah and Diolinoir to the Austrian Zweigel and Saint-Laurent reds... Le Fab's inspired blends and single-varietal wines don't just promise to take you on wonderful journeys: they clearly deliver.
