Description
Marc's brandy
"We make our grappas from white grape marc (Macabeu, Grenache gris, Muscat, etc.). After pressing, we destem the pomace to keep only the pulp and skins. It is then placed in tanks to ferment. Distillation takes place the following winter, using an iron still (double distillation). The eau-de-vie is left to rest for at least a year, to allow the fire to die down. It is gradually adjusted with "Mont Roucous" mineral water.
